Preheat oven to 350* and line a large baking sheet with parchment paper.
Combine dry ingredients: oats, coconut shreds, coconut chips, salt, cinnamon. Stir well.
Add wet ingredients: coconut oil, maple syrup, vanilla. Stir well.
Spread granola onto the prepared baking sheet in an even layer.
Bake at 350* for 10-13 minutes.
Remove from oven and stir. You can use the back of your spatula to press the granola down. The more you press the bigger chunks of granola you’ll have. Press less and it’ll be smaller/more crumbly.
Return the pan to the oven and bake for another 10-13 minutes or until the granola is golden brown.
Remove from the oven and let it cool completely.
Add dried fruit and break up granola (if necessary or desired). Mix well and store in an airtight container.
