Add the chopped bacon to the ground meat, mix until incorporated.
Roll the meat into small balls, roughly 3-4 tbsp each.
Bring your cooking surface (Blackstone, griddle, or cast iron pan) to medium high heat.
Place the meat balls onto the heated surface and use the burger press to smash each ball.
Allow to cook for 50-70 secs before flipping (the edges will be showing gray/cooked).
Flip the patty, add a slice of cheese & allow to cook for another 50-70 seconds.
Stack 2 patties together & set aside.
Repeat until all the burgers are cooked.
Assemble burgers - bun, patties, sprinkle of salt, caramelized onions, chopped pickle, & smash sauce.
