minced garlic

fennel seeds

cayenne pepper

black pepper

oregano

tsp
thyme
1/2

red wine vinegar

cold water
Instructions
In a large bowl combine all dry ingredients, mix well.
Add wet ingredients and mix well.
Cube up wild game and pork shoulder into 1-2 inch cubes (or whatever will accomodate your grinder).
Combine cubed up meat with spices in a large bowl and mix well.
Grind mixture with a course attachment.
Grind mixture again with a fine attachment.
Weigh out meat into 1lb portions, package to your liking, and freeze.
Notes
**This recipe is wonderful as 50% pork shoulder 50% wild game BUT if you would like to do it with fat instead, 20-25% pork fat works as well!
