Pro Metabolic?

I have been dipping my toe in the ‘pro-metabolic’ world for almost a year now, which means I have been reducing my consumption of nuts. Now, don’t think I’m crazy, there’s a reason! The last 10 years of diet culture has us thinking that real butter, cheese, dairy is bad and offers us all these alternatives to make it healthy. Nut flours, nut milks, nut CHEESE?! I draw the line there. These alternatives can be great if you have an allergy to gluten or dairy, however, I think it’s easy to go overboard. 

If you are familiar with pro-metabolic eating, you know that it focuses on avoiding polyunsaturated fatty acids (PUFAs). PUFAs are found in nuts and if we are replacing our coffee creamer, cheese, and flours with all nut products, we’re going to have a considerably higher amount of PUFAs in our diet. 

The primary issue with PUFAs is that they are highly unstable. They oxidize at a low temperature – meaning they become rancid or unstable. Oxidation creates free radicals and these free radicals can promote cell damage.  

I’m not against nuts!

Anyway! This isn’t a call to avoid all nuts, I still enjoy nuts occasionally but learning this has led me on a search to find a granola that wasn’t filled with nuts because I eat granola on my yogurt at least 5 days a week.

So here is the nut free granola that still had the perfect crunch and sweetness. This recipe is great eaten by the handful or over a yogurt parfait.

Nut Free Granola Recipe (Pro Metabolic)

Ingredients
  

  • 3 c oats
  • 1 c shredded coconut
  • 1 c coconut chips optional, can use more shredded coconut
  • 1/2 c coconut oil
  • 1/2 c maple syrup or honey
  • 1 tsp salt
  • 2 tsp cinnamon
  • 2 tsp vanilla
  • 2/3 c mix ins craisins, raisins, mini chocolate chips, any dried fruit

Instructions
 

  • Preheat oven to 350* and line a large baking sheet with parchment paper.
  • Combine dry ingredients: oats, coconut shreds, coconut chips, salt, cinnamon. Stir well.
  • Add wet ingredients: coconut oil, maple syrup, vanilla. Stir well.
  • Spread granola onto the prepared baking sheet in an even layer.
  • Bake at 350* for 10-13 minutes.
  • Remove from oven and stir. You can use the back of your spatula to press the granola down. The more you press the bigger chunks of granola you’ll have. Press less and it’ll be smaller/more crumbly.
  • Return the pan to the oven and bake for another 10-13 minutes or until the granola is golden brown.
  • Remove from the oven and let it cool completely.
  • Add dried fruit and break up granola (if necessary or desired). Mix well and store in an airtight container.
